This is special - really special.
This is what we serve people when we invite them for dinner for the first time, and so far everyone has loved it. It is pretty spicy because of the chilli, but we serve it with sour creme for the sensitive palates (like mine). If we are inviting people for this we usually double the recipe.
The longer this gets to marinade, the better it gets.

Vietnamese Pork with Lemon Grass
Serves: 4

Ingredients
For the marinade:
450 g boneless pork loin, cut into slices
1 tbsp light soy sauce
2 tsp fish sauce (nuoc mam)
1 tsp cornflour
1 stick fresh lemon grass, sliced and then chopped
3 tbsp onions, very finely chopped
3 fresh hot green chillies, finely chopped
Freshly ground black pepper
1 tsp sugar
1 tbsp corn, peanut or olive oil
½ tsp hot curry powder
For the stir-frying
3 tbsp corn, peanut or olive oil
90 g onions, peeled and thinly sliced
5 tbsp coriander leaves
Method
1. Put the meat slices in a bowl with the marinade ingredients, mix well, cover, and refrigerate for an hour and up to 2 hours if desired.
2. Pour the oil into a large wok or frying pan and set over a medium-high heat. When the oil is hot, put in the onions. Stir and fry until the onions are slightly browned, about 2 minutes. Put in all the meat, together with its marinade, increase the heat to high, and fry, stirring continuously, until the meat is just cooked through.
3. Serve, garnished with the coriander leaves.

Beef Stroganoff
I tried this one for the first time this week and it was very easy to make. With a meal like Beef Stroganoff you easily expect hours of preparations and cooking - but this is so simple. So, when you hear simple and quick, you would think the quality would be less than amazing, but that's where you are wrong.
This meal is just simply amazing for a weekday dinner, but could also easily be used for a weekend special.
I usually use a little bit more meat than the recipe says, and I am not a slave to the measurements of vegetables and such. I am sure I used more mushroom than the recipe says, and next time I will also use more onion - just because it was all so good. But with the extra bit of meat and 3dl of creme fraiche (instead of 200g) this was dinner for 2, as well as a good size lunch for both of us the next day.
We had this with rice this time, but will try it with pasta next time.

50 g butter
1 onion, finely chopped
250 g button mushrooms, thickly sliced
500 g lean steak, cut into thin strips
200 g crème fraîche
300 g tagliatelle
Chopped parsley to serve

1. Melt 25g butter in a large frying pan and cook the onion until soft.
2. Add the mushrooms and cook over a high heat until they turn golden. Remove from the pan and reserve.
3. Melt 25g butter over a high heat and cook the beef, in batches, stirring, for about 3-4 minutes until well browned. Be sure the fat in the pan is hot again before adding the next batch.
4. When all the meat is cooked, return it to the pan, add the onion, mushrooms and crème fraiche and warm gently.
5. Serve the beef stroganoff on a bed of cooked tagliatelle and top with chopped parsley.
